Oak barrels are commonly used for aging FORTIFIEDS (Ports, Muscat, Sherry, Tokay) and Spirits, because they impart desirable flavors and aromas to the liquid. The oak wood contains cellulose, hemicellulose, lignin, and tannins, which break down during the seasoning of the raw planks and as a result of heat during the cooperage process. Wet old oak staves are preferred because they are softer and easier to bend into the traditional barrel shape and more importantly, with what you have added, the aged Oak flavours over time blend and impart the subtle nuances, the aged flavor profiles.
